21 Day Fix | 1 Week of Meal Plans

Confession this is the SECOND time I've started the 21 day fix.  The first time, I thought I'd just do the workouts and didn't buy the 21 day fix boxes of shakeology.  Fail.

It's true what they say it's 80% what you do in the kitchen and 20% in the gym.  I really needed to crack down on my eating as well to get my desired results.  And while I'm not there yet, I can definitely see how this program (eating well along with the workouts) can get my to my goal.  

Also, I should say that I don't think you have to buy the shakes for the eating plan to work, it just helps but there are a lot of other protein powders you could use as well.

Anyways... when I started the 21 day fix this second time I've been full blown on the shakes everyday and eating well within my "boxes".  And I figured since it can be pretty overwhelming at first I'd share an example of a week of meal plans you could use on the meal plan.  

ps.  anyone else find it super annoying to find a 21 day fix recipe on pinterest and it only lead to a meal plan you have to pay for?  *insert eye roll here*

this meal plan is for the 1,200-1,499 caloric level
boxes for level 1 per day: 3 Green, 2 Purple, 4 Red, 2 Yellow, 1 Blue, 1 Orange, 2 Tbsp


Breakfast: 2 Egg Muffins  1G 1R
(I make these on Sunday for the week ahead and keep them two in a ziploc in the fridge)

Lunch: Shakeology 1R
(or any protein powder of your choice) with 8-10oz of almond milk)

Snack 1: Medium Banana and 1/2 Avocado  1P 1B

Snack 2: 2 Rice Cakes (45 calories or less) 1Y

Dinner: Chicken and Broccoli 2G 2R
(nothing fancy with this meal just a little garlic salt and minced garlic added to the chicken and garlic salt to the broccoli, but its delicious AND the perfect I'm exhausted/don't wanna cook/Monday night dinner)

Snack 3:  Roasted Chickpeas and Strawberries 1Y 1P


Breakfast: Overnight Oats: Oatmeal Cookie 1Y 1/2R 2Tbsp
(like I said above during the week I generally make the egg muffins for the week ahead, but this is one of my other favorite go-tos that can be made ahead)

Lunch: Shakeology and an Orange  1R 1P

Snack 1: Banana and Vanilla Greek Yogurt 1P 1/2R

Snack 2: 10 Baby Carrots and Sweet Potato 1G 1Y

Dinner: Breakfast for Dinner 2R 1B
(2 fried eggs, 4 pieces of Turkey Bacon and 1/2 Avocado)

Snack 3: Steamed Broccoli 2G


Breakfast: 2 Egg Muffins 1G 1R

Lunch: Shakeology and 10 Baby Carrots 1R 1G

Snack 1: Strawberries and Vanilla Greek Yogurt 1P 1R

Snack 2: 2 hard boiled eggs and 10 Baby Carrots 1R 1G

Dinner: Burrito Bowls: sweet potatos, black beans, shredded cheese, tsp of greek yogurt 2Y 1B
(you could easily make these tacos, just keep in mind a whole-grain tortilla counts as 1Y and your sweet potato, and all types of beans are also yellow so you just have to make it all fit within your 2 yellow boxes)

Snack 3: Banana with Peanut Butter 1P 2Tbsp


Breakfast: 2 Scrambled Eggs, 4 slices of Turkey Bacon and a Banana 2R 1P

Lunch: Shakeoloy + 1 cup of Spinach + 10oz Almond Milk + a couple ice cubes 1R 1G
(whenever I'm having a hard time fitting my greens in I'll add a cup of fresh spinach to my shake and you honestly can't taste the difference)

Snack 1: Blueberries and Roasted Edamame 1P 1Y
Snack 2: Small Apple with Peanut Butter 1P 2Tbsp

Dinner: Four Cheese Garlic Spaghetti Squash  2G 1B

Snack 3: 2 Hard Boiled Eggs and 8 Small Whole Grain Crackers 1R 1Y


Breakfast: Egg Muffins 1G 1R

Lunch: Shakeology and (almost) 1 cup Spinach 1R 1G (almost)

Snack 1: Vanilla Greek Yogurt and 10 Pistachios 1R 1/2B

Snack 2: Raw Broccoli and Roasted Chickpeas 1G 1Y

Dinner: Skinny Chicken Parmesan  1R 1/2B 1/4Y 1/8G

Snack 3: Apple Slices and Strawberries 2P

Snack 4: 1 Rice Cake and Pumpkin Seeds 1/2Y 1O

Saturday | 

Breakfast: Overnight Oats: Banana and Peanut Butter  1Y 1P 1R 2Tbsp

Lunch: Super Green Shakeology  1R 1/2G 1P

Snack 1: Vanilla Greek Yogurt and almonds 1R 1/2B

Snack 2:  Roasted Edamame, Raw Baby Carrots and Broccoli 3/4Y 2G

Dinner: Leftovers from last night 1R 1/2B 1/4Y 1/8G


Breakfast: Avocado Toast (2 wholegrain slices, 1/2 Avocado, 2 Fried Egg) 2Y 1B 1R

Lunch: Shakeology + 1 cup of Spinach 1R 1G

Snack 1: Strawberries and Greek Yogurt 1P 1R 

Snack 2: Mixed Vegetables and 21 day fix healthy ranch dressing 1G 1/2O (2tbsp of dressing)

Dinner: Chicken "Noodle" Soup 1G 1/2R 1Tbsp

Snack 3: Tuna with 1 Tbsp Mayo and Grapes 1/2R 1Tbsp 1P

some additional notes:

+ you can have your shakeology any meal or snack during the day, I prefer to do so at lunch time, but a lot of people in my accountability group do so for breakfast

+ my coach suggested  I eat as many of my boxes I can each day, but some days I just don't hit the blue/orange and she said just to make sure they get mixed in there.  BUT you do want to be getting those green/purple/red each day because they'll keep you full and getting all those GOOD nutrients

+ almost everything is by how much you can fit into that box, ex: my chicken and broccoli I use 2 reds and 2 greens, but you could use more or less

+ if you're just thinking about doing the 21 day fix I suggest contacting my coach Lauren 

+ also, keep in mind there is a little bit of wiggle room, as in you can swap out a glass of win for your yellow box, or every once in a while there may be a special occasion you want to indulge for and that's okay as long as it's all in moderation and you get back to the plan

Quick & Easy Healthy Snacks | 21 Day Fix Approved

My kryptonite when it comes to eating healthy?  Snacks.  I am a b i g snacker, and love me some Doritos (my vice lately).  Another problem?  The snacks that are easy to grab are always the not-so-good-for-you type.  See: Doritos.  

BUT I've got a list for you, of quick & easy healthy snacks that make it a little easier to stick to that healthy lifestyle you're trying to achieve (hello, bikini season).  Oh, and easy to already have prepared and ready to go when the hunger strikes. 

1. 20 Pistachios + 1 Rice Cake | 1 B 1/2 Y

2. Pumpkin Seeds | 1 O

3. 1/2 Avocado + 10 Carrots | 1 B 1 G

4. Banana Bread Muffins (1) | 1/2 P 1/3 R 1/3 Y, 1/2 tbsp

5. 2 Rice Cakes with Almond Butter | 1/2 Y 2 tbsp

6. whole wheat blueberry banana muffins (2) | 1 Y 1 P 


7. 1/2 English Muffin (100 cal) and Almond Butter | 1 Y 1 tbsp

8. No Bake Peanut Butter Oatmeal Balls (2) | 1/2 Y 1 tbsp

9. 1/2 Banana with Peanut Butter | 1 P 2 tbsp

10. Apples with Peanut Butter | 1 P 2 tbsp

11. 2 Hard Boiled Eggs | 1 R

12. 10 Baby Carrots + Mini Baybel Light Cheese | 1 G  1 B

13. Peanut Butter and Banana Quesadilla | 1 tsp 1 P 1 Y

14. Avocado Toast (whole grain) + Fried Egg | 1 Y 1 B 1/2 R

15. Sweet Potato, Avocado +2  Poached/Fried Eggs | 1 Y 1 B 1 R

16. 5 Garlic and Herb Roasted Carrots | 1 G 1 tbsp

17. Kind Bars/Luna Bars | 1 Y

18. Strawberries and Greek Yogurt | 1 P 1 R

19. 4 Tbsp  Approved Ranch Dressing + Vegetables | 1 O 1 G

20. Deviled Eggs

21. 2 English Muffin Pizzas | 2 Y 1 P 1 B

So here's the thing, you may look at this list of snacks and think those are pretty simple.  But that's the point.  When I'm planning out my meals/snacks throughout the week I want my snacks to be quick, easy and no fuss.  

I did included a couple snacks that are actual recipes that you can prep and make ahead on Sunday and have for the rest of the week.

The truth about these snacks?  They taste pretty darn good and truly fill me up until the next meal/snack is due.  Not to mention they're all 21 Day Fix approved.  But of course, you don't have to be doing the program to enjoy these.

Overnight Oats Recipes | Oatmeal Cookie + PB & Banana

You've heard it before: if you fail to plan, you are planning to fail.  

And it's true really.  I've been doing the 21 Day Fix program lately and it's awesome.  The boxes really help me stay on track.  

But the thing that helps most, is prepping and planning ahead.  The week before I plan out our dinners for the week, and plan my breakfast/snacks around that.  

Lately, we've been getting our groceries through Walmart's Online Grocery system and I'm LOVING it.  So after I've planned the week out, I'll pick our groceries and order them through the app and pick them up the next day.

Three cheers for avoiding the Walmart crazies every weekend.

Then I start the prepping.  I prep all the snacks I can for the week and go ahead and make my breakfast for the entire week too.  

And that's where this post comes in.  This past week I've been all about these two overnight oats recipes.  AND once again you can prep them ahead of time so they're ready to go in the morning.  Not to mention the prep time is maybe 5 minutes.

Even if you're not doing the 21 Day Fix program these are delicious recipes and of course they're a fantastic healthy option.

1 cup Rolled Oats
4 Tbsp Almond Butter
2 Tsp Cinnamon
2 Stevia packets
4 Tbsp Honey
1/2 cup Nonfat Plain Yogurt
1/2 cup Unsweetened Vanilla Almond Milk 

adapted from this recipe

Instructions: yields 2 servings
Mix all the ingredients together and put in an air tight container.  I put mine in a mason jar.  Store in the refrigerator overnight and they're ready to go in the morning. 

21 Day Fix Boxes: per serving 1Y 1/3R 2tbsp 
(honestly I just round up to 1/2 R because that's easier to keep track of)

2/3 cups of Rolled Oats
2/3 cups Unsweetened Vanilla Almond Milk
2/3 cups Nonfat Plain Yogurt
1 large Banana, mashed
4 Tbsp of Peanut Butter
2 Tsp of Honey
1/4 Tsp Cinnamon
pinch of Salt

Instructions: yields 2 servings
Mash banana in a medium bowl.  Add in the rest of the ingredients.  Store in an air tight container, overnight in the refrigerator and they're ready to go in the morning.

21 Day Fix Boxes: per serving 1/2Y 1/2R 1P 2tbsp

Notes: For both recipes I doubled them to fill the mason jar and ate only half of a jar for each breakfast, so these recipes truly make 2 servings each.  Also, I put mine in a masonjar because they kept fresh this way, and made for easy storage. 

Now, don't get me wrong I still love to bake and will continue to share those type of recipes on here.  BUT would y'all like to see more healthy/21 day fix approved recipes on here?  Sound off in the comments below.

If you haven't learned by now, I am a total bargain shopper.  Yes, I'll ooh and ahh at that gorgeous but insanely overpriced dress.  I'm looking at you Nordstrom "flower hour sky" dress.  But at the end of the day, more times than not, I just can't bring myself to spend that kind of money.

Easter Muddy Buddies

First things first, what really is the difference between "muddy buddies" and "puppy chow"?  I mean, really.  

Obviously, I use both names depending on which I think sounds better, haha.  Anyone else?


Muddy Buddies are literally my favorite treat to make for any type of function.  They are always a hit.  Literally, any twist I've put on the original recipe has always been welcomed with open arms (and open mouths).  My other favorite recipe to make is Oreo Truffles.

Notice both of my favorites are no-bake recipes.  And y'all it's practically impossible for you to mess up either.

So, after making a Cake Batter Puppy Chow (recipe to come at the end of the month) recipe for the Steeple Chase I knew I wanted to make an Easter version.

I was already placing our Walmart Grocery Online Order (post to come on that soon, too) and just searched their Easter Candy section for candies that appealed to me.

Enter the ever so famous Cadbury Eggs and Crispy M&Ms (one of Thomas' faves).  

And thus this Easter Muddy Buddies recipe was created.

Vanilla Almond Bark or Candiquik, 1/2 of the bar
2 cups-ish of Powdered Sugar
2-3 cups Rice Chex Cereal
optional: Sprinkles

1. Melt candiquik according to the package instructions, generally in 30 second intervals.

2. Pour in chex mix and stir.  -- This step is really done by eye.  I pour in the chex mix and stir until it's coated, however, each piece really doesn't need THAT much chocolate coating.  

3. Pour powdered sugar into a large ziploc bag.  Scoop coated chex mix into the ziploc bag, close bag and shake until the chex mix is now coated with powdered sugar.

4. Pour into an air-tight container.  And repeat as many times necessary.

5. If you want to add sprinkles you could do so before the chocolate is completely cooled or at the end.

6. Add candy to the container and there ya have it.

Spring Must Haves

Oh hey y'all.  It is officially Spring Break here and I'm over the moon.  Don't get me wrong.  I love my students.  Truly.  And I love teaching.  BUT.  But a little break never hurt no one.  ;)  

I told my students my plans were to sleep, relax, pee when I want to (all the teachers, can I get an amen?) and be kid-free.  But I'd be lying if I didn't admit I'll be happy to see them when we get back.


Spring in the South is really a joke.  I mean let's be honest it's practically Summer (and Summertime is basically hell).  The warm weather is in full effect and this girl is ready to get her tan on.  And with a new season brings on a new set of must-haves.  {see my winter must haves in this post}
