With my Summer vacation coming to an end, and school starting back yesterday all I can think is "Gimme ALL. THE. CAFFEINE." So I think we're a little overdue for a good ole coffee date.
We all know my morning iced coffee is a must. As in don't talk to me until I've had my coffee. But Coffee Punch? Coffee flavored cupcakes? Yes, please! And I KNOW I can't be the only one dreaming off all the coffee. So join me for this coffee date won't you?
If we were having coffee, this time we'd meet at my house because I picked up International Delight Iced Coffee last time I was at the grocery store, and y'all there caramel macchiato flavor is my jam. T
Then I'd tell you to pick yourself up some at Walmart next time you go AND because I don't want you having any trouble finding it. They're located in the refrigerated tea/juice section (pictured below)
If we were having coffee, I'd tell you all about my first day of school yesterday. Y'all my sixth graders this year are so sweet, caring and have already made their way into my heart. And of course, I'd tell you about what I wore and what a great deal the top is because best friends share where they got a good deal on cute clothes -- right? ps. I'll be spilling all those deets on my shirt (seriously under $15) in tomorrow's post
If we were having coffee, I'd ramble on and on about how hot it has been here in SC. As in mid to upper 90's every day. Will I ever get used to this weather? Probably not. Butttt, I'll grab out the International Delight Iced Coffee from the fridge pour it over ice and kill two birds with one stone -- 1. iced coffee is such a easy way to cool down instantly and 2. getting that coffee house taste without the driving, lines and hassel. win/win y'all.
If we were having coffee I'd tell you, my love for snapchat seriously grows by the day. It's the filters. They just get me. Anyone else a snapchat addict?
If we were having coffee, I would pull out the Caramel Macchiato Coffee Cupcakes I made recently. But really you can never have too much coffee, amiright?! And like I said back to school means I need ALL the caffeine I can get. Including these delicious cupcakes.
Then I'd have to tell you that the recipe makes 12 and the reason there are only 8 this morning is because I ate FOUR the day I made them. #shameless Well...maybe I feel a little guilty...
And here in the South you don't just share the treats you've baked up, you share the recipe as well. I wouldn't let you leave without writing down the recipe for you...
Caramel Macchiato Coffee Cupcakes:
1/2 cup butter, softened
2/3 cup granulated sugar
3 large eggs
2 tsp. vanilla extract
1 1/2 cups all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/4 cup International Delight Iced Coffee, Caramel Macchiato
preheat over to 350 F
1. Mix together butter and sugar.
2. Add in eggs, one at a time.
3. Mix in vanilla.
4. Combine dry ingredients (flour, baking powder, salt).
5. Then alternating the dry ingredients and International Delight Iced Coffee slowly mix in the remaining ingredients.
6. Pour into a lined cupcake tin about 2/3 of the way full, and back for 15-20 minutes at 350F.
Coffee Cream Cheese Icing:
8 oz. Cream Cheese, softened
1/2 cup butter, softened
3 cups powdered sugar, sifted
1 tsp coffee extract
1/2 tsp International Delight Iced Coffee, Caramel Macchiato
1 tsp. vanilla extract
1. Mix together the cream cheese and butter until fluffy.
2. Add in the coffee extract, International Delight Iced Coffee and vanilla extract.
3. Slowly add in the powdered sugar. Whip until fluffy.
If we were having coffee, I'd tell you that I am loving watching the olympics this year. Before this year, I don't think I was ever really that into them or watched that much. But Thomas and I have been watching hours everynight. My favorite being gymnastics, but I also really love the beach volleyball and diving. And I tear up EVERY single time someone else cries when they medal or when they play our national anthem...emtional wreck over here y'all.
If we were having coffee, I would tell you my obsession with online shopping is at an all time high. Now that I think about it I guess I never really calmed down after my online shopping extravaganza in July. But I have been buying ALL the things. Mainly baby items (my SIL and several friends are having babies this fall/winter) but also items for my classroom. I'm also trying to build up my Fall wardrobe, which is funny because here it won't reach actual Fall temps until end of October/November. While my Summer vacation is over, the Summer temperature is still in high gear (mid 90's everyday). Hello iced coffee, thank you for cooling me down during these crazy high temps and thank YOU for joining me on this coffee date.
