Before we got married, for close to two years Thomas and I were in a long distance relationship. And dates were few and far between. Now that we're under one roof, and the chaos of the school year is coming to an end I'm excited to start planning more adventurous dates for us. First up, backyard picnics.
My mother-in-law has some of the BEST southern recipes, and she learned most of them from her mother-in-law. This chicken salad recipe is so so yummy, and while we usually dig in with crackers I knew it'd be the perfect picnic food slapped on some croissants. And paired with some cute dinnerware and the new Coca-Cola™ (with song lyrics on them!)...I mean come on y'all. Picnic perfection.
My Mother-in-Laws Chicken Salad
2 Chicken Breast
1. Boil chicken breasts (or as we did this time, Thomas popped them in the crock pot for a couple hours while I was at work).
2. Shred chicken in using a food processor (work smart not hard...right?)
3. In a large mixing bowl, combine shredded chicken, mayonnaise (about a cup), dried cranberries and chopped pecans.
4. Serve on croissants or enjoy with crackers.
And no picnic is complete with out a nice, refreshing Coca-Cola. Coca-Cola is always keeping me on my toes with what they're going to put on their packaging next. Since I was planning a picnic day date, I loved being able to pick out lyrics that fit the occasion. I can already imagine all the occasions it'll be fun to give these Coca-Colas for: graduation, memorial day, anniversaries, the options are endless.
