I've mentioned it before, but my husband is a great cook and has some of the best recipes. Today I'm sharing his recipe for a Cheesy RO*TEL crock pot appetizer. A quick and easy recipe to whip up when entertaining or watching the big game.
When entertaining for a big football game (and not naming any names here, but my team is totally kicking butt this year) there can be a lot on your to do list. My hack? Utilize your crock pot. Throw your ingredients in the beloved crock pot, and let them cook away while your hands are free to tackle the rest of your to do list. Trust me, the dip will turn out amazing.
Ingredients:
Velveeta
2 lbs of ground meat (we used veal because we had it already, but its just as tasty with beef)
2 Cans of RO*TEL (using the "diced tomatoes with lime juice & cilantro" really kicks the flavors up a notch)
Bakery French Bread
Directions:
1. Brown Meat
2. Put meat, Velveeta (cubed) and 2 cans of RO*TEL (do not drain) in the crock pot on low for 2 hours, or until cheese is melted completely.
3. Stir occasionally.
4. Serve with bakery bread (we chose french bread) and tortilla chips.
