Gingerbread Cupcakes with SPLENDA

This year I am so head over heels for spending Christmas with Thomas for the first time, EVER.  That's right in our 3 years of dating we have never spent Christmas together, making our first married Christmas that much more exciting.  

And we are all about creating traditions and memories that will last a lifetime.



One tradition that I want to continue in our home?  Baking.  And this Gingerbread cupcakes are totally drool worthy.  Holiday perfection.  And get this, you can eat them guilt free thanks to SPLENDA®.  Yes, you read that right, these cupcakes are made with SPLENDA®.  


Yesterday we decked the halls, and by that I mean we decorated our trees because we all know these "halls" have been decked for quite some time now (read: november 1st).  And I've been wrapping Christmas presents likes crazy.  And l o v i n g every minute of it.

In fact, our Christmas list (besides each other) is almost completely finished.  Thank you online shopping.  And this leaves the entire month of December for more Christmas fun and traditions (read: baking).  So it's no surprise that when I found the SPLENDA® Brown Sugar Blend at Walmart I jumped at the chance to make a guilt free version of gingerbread cupcakes.  



I mean how can you NOT want a chance be to able to eat "one more" cupcake, and let's face it I'd probably snag one more cupcake regardless.  Hello guilt free holiday indulging.  

*tip set our your cream cheese, butter and egg the night before so they'll be the perfect temperature for baking

INGREDIENTS:
1/2 C SPLENDA® Brown Sugar Blend, packed
1/2 C Butter, softened
1 Egg, room temperature
1/2 Milk, room temperature
1/2 C Molasses
1 tsp. Vanilla
1 1/3 C Flour
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/4 tsp. Salt
1/2 tsp. Nutmeg
1/2 tsp. Ginger
1 tsp. Cinnamon

DIRECTIONS:
1. Preheat oven to 350F
2. Mix SPLENDA® Brown Sugar Blend and softened butter.
3. Add in egg and mix thoroughly.
4. Stir in milk, molasses and vanilla.
5. In a mixing bowl, add in the remaining ingredients.  Flour, baking powder, baking soda, salt, ginger, nutmeg, and cinnamon.  
6. Pour batter in lined cupcake tins 2/3 full.  
7. Bake at 350 for 15-20 minutes.

YIELDS 12 SCRUMPTIOUS CUPCAKES.

It's Friday, you guys...we made it!  Only two more work days until Thanksgiving break and a nice weekend in between to save my sanity.  This middle school stuff is no joke y'all. 

But I'm not here to be a debbie downer today, I'm here to share a little announcement.

Timmerman Party of 2: The Girls Getting Ready

It's that time again y'all.  Time to share more of my favorite day ever.  It's Wedding Wednesday.  Now that I've shared all about the wedding gifts & tips for your thank you notes...it's time for one of my favorite parts of the day.  Getting ready with my girls.




The morning of our wedding day was so much fun.  My bridesmaids and I all stayed together the night before our wedding, and in the morning (per my request) we got Chic-fil-a for breakfast and Starbucks.  Then we were off to get our hair and makeup done.

funny story (that wasn't so funny at the time): the week before our wedding, after having TWO hair trials with my stylist, my mom stopped by the hair salon to discuss her hair for the wedding day.  When she started to talk to my hair dresser about her hair, she announced that she wouldn't be in town that day that she would be on vacation.  I'm sorry what?!  Not only did she just decide to go on vacation, but she failed to let me know ONE WEEK before my wedding day.  And this is a lady that has cut my hair since I was litearly 3 years old.

Thankfully, my mom was able to set up all new appointments for my bridesmaids and I.  AND my hair turned out wayyyy better than both of the hair trials before.  What a blessing in disguise.  



After getting our make up and hair did we were off to lunch.  Where I hardly ate anything because I was so excited.  But forced myself so I wouldn't pass out.  Then it was off to the hotel to get dressed and take pictures.

When we got to the hotel we started changing and finished getting ready, and when the photographer showed up it felt like everything began to blur from there on.  We were all of a sudden rushed to get in pictures before meeting the guys at the venue (why I'm not sure since we had started when we were supposed to).  So while there aren't a lot of pictures of the "get ready process" we still have so many great pictures, AND I can't wait to see the video which should've captured it.

DIY Entertaining Tray

Hi everyone, I'm Emelia from Dream Big & Buy the Shoes. It's my little place on the Internet where I share everything from recipes including my Bacon Cheddar Beer Soup, DIY projects like my Chalkboard Menu Planner , how to bring back the spark in your relationship with fun things like day dates & posts about my recent wedding including my perfect day at my winery bridal shower.

I thought I would share a great DIY with you today that is both easy and useful for everyone. I love the fact that it is very inexpensive also, which is always awesome. You can use this tray for some snacks at your next girls night, or on your coffee table as a home for some beautiful books.



You will need:
A piece of marble (I bought a 9x12 piece for only $1.58!!)
2 cabinet pulls (there's so many options which made it fun for choosing this part)
4 copper tube caps (there's a few sizes & I've used a few different ones including 1/2 & 3/8)
Krazy glue
Ruler
Sharpie



To make: 

I first spray painted the copper caps with gold spray paint so that they matched the other pieces.

Next, flip over your marble piece and on the outer four corners glue each cap individually to make it rise off the surface you will be placing your tray on.

Once the caps are glued in to place you can flip over your marble and measure the length. Align the spot somewhere in the middle where you would like to place your cabinet pulls or handles. Mark with a Sharpie, then glue on each side.

Clean up any excess glue while wet with a Q-tip because it can dry pretty fast.

Allow to dry for 24 hours before use so that everything can set in to place.







The tray is so quick and easy to make, which is always awesome when it comes to DIY projects.
I also made one that I'm using as a perfume tray and it came out so beautiful.
