When it comes to the holidays I think of two things, good food & and even better leftovers. This year we will be traveling for the holidays and you better believe we'll be bringing along desserts to share with the family (I'm talking about Chocolate PEPPERMINT truffles), and I have my heart set on bringing back some delicious leftovers as well. And when it comes to food I'm only using a trustworthy product to make the road trip. Rubbermaid TakeAlongs are what will be transporting our beloved desserts this year. Now onto the recipe...



This chocolate peppermint truffle recipe is a twist on a household favorite that your family and coworkers will love.  My family and Thomas' family are head-over-heels for these bite-sized pieces of perfection.  And adding a Christmas twist only makes them that much better.
Not to mention that once all the desserts have been deliciously devoured (as these truffles always are) you'll have your Rubbermaid TakeAlongs ready to bring home leftovers in. 





INGREDIENTS:
Peppermint Chocolate Sandwich Cookies (2 packages, approx. 36 cookies)
8oz Cream Cheese Package, softened
White Chocolate Melting Candy (1 package)
Candy Canes (approx. 2-3)

INSTRUCTIONS:
1. Crush the chocolate sandwich cookies in the food processor (or in a plastic bag with a spoon).
2. In a medium bowl, mix the cookie crumbs with the softened cream cheese.
3. Roll the mixture into small balls (about tablespoon size) and place on a cookie sheet.
4. Place toothpicks in each ball, and then chill in the fridge for 1 hour.
5.  Melt the candy melt according to the directions on the packaging.
6.  Dip each truffle in the melted white chocolate and place on parchment paper.  
7.  Remove the toothpick and let harden.

*optional: top each trushed with crushed candy canes.  This must be done immediately before the white chocolate hardens.  This gives the truffles that extra peppermint flavor to really taste the holiday spirit.
