Gingerbread Cupcakes with SPLENDA

This year I am so head over heels for spending Christmas with Thomas for the first time, EVER.  That's right in our 3 years of dating we have never spent Christmas together, making our first married Christmas that much more exciting.  

And we are all about creating traditions and memories that will last a lifetime.



One tradition that I want to continue in our home?  Baking.  And this Gingerbread cupcakes are totally drool worthy.  Holiday perfection.  And get this, you can eat them guilt free thanks to SPLENDA®.  Yes, you read that right, these cupcakes are made with SPLENDA®.  


Yesterday we decked the halls, and by that I mean we decorated our trees because we all know these "halls" have been decked for quite some time now (read: november 1st).  And I've been wrapping Christmas presents likes crazy.  And l o v i n g every minute of it.

In fact, our Christmas list (besides each other) is almost completely finished.  Thank you online shopping.  And this leaves the entire month of December for more Christmas fun and traditions (read: baking).  So it's no surprise that when I found the SPLENDA® Brown Sugar Blend at Walmart I jumped at the chance to make a guilt free version of gingerbread cupcakes.  



I mean how can you NOT want a chance be to able to eat "one more" cupcake, and let's face it I'd probably snag one more cupcake regardless.  Hello guilt free holiday indulging.  

*tip set our your cream cheese, butter and egg the night before so they'll be the perfect temperature for baking

INGREDIENTS:
1/2 C SPLENDA® Brown Sugar Blend, packed
1/2 C Butter, softened
1 Egg, room temperature
1/2 Milk, room temperature
1/2 C Molasses
1 tsp. Vanilla
1 1/3 C Flour
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/4 tsp. Salt
1/2 tsp. Nutmeg
1/2 tsp. Ginger
1 tsp. Cinnamon

DIRECTIONS:
1. Preheat oven to 350F
2. Mix SPLENDA® Brown Sugar Blend and softened butter.
3. Add in egg and mix thoroughly.
4. Stir in milk, molasses and vanilla.
5. In a mixing bowl, add in the remaining ingredients.  Flour, baking powder, baking soda, salt, ginger, nutmeg, and cinnamon.  
6. Pour batter in lined cupcake tins 2/3 full.  
7. Bake at 350 for 15-20 minutes.

YIELDS 12 SCRUMPTIOUS CUPCAKES.
