Triple-Layer Lemon Blueberry Cake

When I think of Summer, the first thing think of is citrus-y fruits.  Well, actually, the first think of is the beach and then I think of all the fruity recipes I'll be stuffing my face with.  Strawberries, lemons, oranges, blueberries...the list could go on.  

First up this summer?  Triple-Lemon Blueberry Cake topped with Lemon Meringue Buttercream.  Y'all, this is a summertime recipe you need to be serving this summer.  And it's brought to you with the help of Rosie Alyea, the mastermind behind The Sweetapolita Bakebook. 

I received a copy of The Sweetapolita Bakebook from Blogging for Books.  Boy did I hit the jackpot with this book.  Not only is it filled with recipes that I can't wait to try out for myself (see below), but I'm blown away with all the tips and tricks Rosie gives in her book.  I seriously feel like I'm getting personal help as I read throughout the recipe & decorating process.  And the jaw-dropping photos are just a added bonus.

Lemon Blueberry Cake

2 C plus 6 tbsp all-purpose flour, sifted
2 tsp baking powder
1 tsp salt
3 C fresh blueberries
1/2 C sour cream
1/2 C whole milk
2 tsp pure vanilla extract
1/2 tsp pur lemon extract
1 tsp lemon zest
1 C unsalted butter, softened
1 1/2 C white sugar
4 large eggs, at room temperature

Lemon Meringue Buttercream
5 large fresh egg whites
1 1/4 C granulated sugar
1 1/2 C unsalted butter, softened
2 tsp pure vanilla extract
pinch of salt
add up to a cup of Lemon Curd to flavor meringue
Instructions: well, you'll just have to buy the book ;)

noted: My presentation of this cake is a slight twist on Rosie's.  The recipe is the same, I just ended up  only making it a double-layer cake & using her Lemon Meringue Buttercream from her bakebook.  No regrets y' may look different but it is absolutely delicious.

  2. I made something so similar for my mom's birthday cake, turned out great and was a big hit! I love that it is a light summertime dessert, but it still has substance to it! :) Great food photography btw!
