Christmas Cake Batter Cookies

Hello readers of Eat Drink & Be Mary! I'm Linds, I blog over at 4 Hims and a Her and I'm super excited that Mary is allowing me to take over today and share one of my favorite Christmas cookie recipes with you all! First off though, I want to acknowledge Mary's wonderful news from this weekend and give her a great big congratulations! I mean that ring is beyond gorgeous and I know we all couldn't be happier for you and Thomas, Mary! Wishing you nothing but a lifetime of love and happiness!

To celebrate, let's do some Christmas baking! It is time to get your Mariah Carey and 'N Sync Christmas playlists blasting, get that red and green apron on, and get your favorite holiday candle lit because 'tis the season to begin Christmas baking! Baking Christmas cookies is probably one of our favorite activities around the holidays, right?! However, the holidays can be extremely busy and overwhelming. I'm here to share with you an easy, delicious and wonderful Christmas cookie recipe that will leave you satisfied with your baking experience and still have time to get that last little bit of Christmas shopping done, presents wrapped, and even do your hair before heading to your weekend holiday party!

If you stop by my blog, you will learn that I love absolutely anything related to cake batter. It is my weakness, so when I found this recipe, I was beyond excited!.

What You'll Need:

1 box of yellow cake mix
1 teaspoon of baking powder
2 large eggs
1/3 cup of vegetable oil
1/2 teaspoon of vanilla extract
1 cup of holiday sprinkles, or as desired (depending on how much of a sprinkle lover you are!)

Alright, is your mouth watering yet? Let's get started!

What You'll Need To Do:

Preheat the oven to 350 degrees

Line two cookie sheets with wax paper

Using a large mixing bowl, mix together cake mix and baking powder

Using another mixing bowl, mix together eggs, vegetable oil and vanilla extract

Add the egg mixture to cake mixture and beat with mixer or stir by hand until fully mixed

Stir in sprinkles, slowly * be careful not to add all sprinkles in at once, add too many sprinkles, or overstir because you may dye the dough

Using a cookie scoop or spoon, form 1 inch rounded dough balls and place onto prepared cookie sheet *allow cookie dough loving husband/boyfriend/fiance/friend to scrape remainders from mixing bowl

Add additional sprinkles to top of dough if desired ;)

Bake for 9 minutes *cookies will be very soft initially, use toothpick method to ensure fully baked

Allow cookies to cool for approximately 5 minutes on cookie sheet before transferring over to wire cooling rack to cool completely

Find a cute holiday platter to serve on for your holiday party or decorate in a cute box when giving them out. It's a cute and fun way to jazz up these simple, yet delicious Christmas cookies!
