Corn Casserole + a giveaway



As promised Tuesday, I'm back with another kick butt side dish for your Thanksgiving table.  This is a casserole dish that doesn't disappoint and comes with a bang!  

Jalapeno Corn Casserole, a dish that truly needs no introduction.  Which is good because I'm all out of clever intros for the week.  oops!

Corn Casserole { originally inspired by this recipe }

what you'll need:
1 bag of Birds Eye Frozen Corn, family size 
1 cup of Heavy Cream (also works with half and half if you don't have heavy cream)
1 stick of Butter
1/4 cup of sliced Jalapenos, roughly (I just use the ones from the jar)
3 tbsp Minced Garlic
1 tsp Paprika
1 tsp Salt
1 tsp Pepper


what you do:
preheat the oven to 250F
Mix the corn, heavy cream, **jalapenos, minced garlic, paprika, salt and pepper in a 8x8 pan.  Slice the butter into chunks and top the corn mixture.  Put the casserole in the oven for 1 1/2 hours.  Stir occasionally.

**You can add the jalapenos at the beginning for a pretty strong kick of spice, or add the jalapenos the last 20 minutes.  This gives the dish a nice spice that everyone can still enjoy.

  3. This is absolutely divine, and combines not one but two of my bfs faves: jalapenos and corn. And I love butter, so really this is a must make. I think we'll have it this week, just to, you know, test it out for Thanksgiving ;) ;)

  14. I made it last night!! I only had creamed corn on hand though, it was too liquid-y, so I will def try frozen corn next time!

  15. I felt that it was a little liquid-y as well, but I liked a little bit of the "sauce" to go with it. Frozen corn may be less liquid-y for you.
