Eat Drink & Be Mary: Corn Casserole + a giveaway

Corn Casserole + a giveaway

As promised Tuesday, I'm back with another kick butt side dish for your Thanksgiving table.  This is a casserole dish that doesn't disappoint and comes with a bang!

Jalapeno Corn Casserole, a dish that truly needs no introduction.  Which is good because I'm all out of clever intros for the week.  oops!

ps. if you missed it, check out the Thanksgiving side dish I shared Tuesday -- it's worth it.

Corn Casserole { originally inspired by this recipe }

what you'll need:
1 bag of Birds Eye Frozen Corn, family size
1 cup of Heavy Cream (also works with half and half if you don't have heavy cream)
1 stick of Butter
1/4 cup of sliced Jalapenos, roughly (I just use the ones from the jar)
3 tbsp Minced Garlic
1 tsp Paprika
1 tsp Salt
1 tsp Pepper

what you do:
preheat the oven to 250F
Mix the corn, heavy cream, **jalapenos, minced garlic, paprika, salt and pepper in a 8x8 pan.  Slice the butter into chunks and top the corn mixture.  Put the casserole in the oven for 1 1/2 hours.  Stir occasionally.

**You can add the jalapenos at the beginning for a pretty strong kick of spice, or add the jalapenos the last 20 minutes.  This gives the dish a nice spice that everyone can still enjoy.

...and now the moment we've all been waiting for drum roll please the visa giftcard giveaway.  Lucky me, this giveaway doesn't need an intro either -- 105 bucks speaks for itself.  especially right before the holidays!

  2. This corn casserole looks amazing, and.....I would totally buy Christmas presents with the gift card. I would love to spend it on me, but...proiorities.

  3. This is absolutely divine, and combines not one but two of my bfs faves: jalapenos and corn. And I love butter, so really this is a must make. I think we'll have it this week, just to, you know, test it out for Thanksgiving ;) ;)

  4. I'd put it towards some things we need for our new home

  5. This sounds REALLY good. I love jalapenos! YUMMMM!

  8. This is Thankgiving feast worthy, for sure! The guys in my family LOVED it for the spice.

  9. Happy to join the link up! It's awesome, and I can't wait to see next month's theme. This recipe is scrumptious, and if anyone in your family enjoys a little kick in their recipe this is your go-to.

  10. Then this is the recipe for you. Definitely give it a go Emelia!

  11. I'm glad I could deliver on your boyfriend's level then, haha. It was a hit for all the boys in my family as well. Taste testing is a must ;) I hope y'all enjoy it like my family dad!

  12. I feel ya, trying to master all the Christmas gifts, along with all the Nov/Dec birthdays (I feel like I know an outrageous amount) is almost overwhelming. Better to get a head start on it now! :)

  13. Thanks so much Kerri, you've made my day a little brighter. This dish is jalapeno filled and I have a feeling you'd love it!

  14. I made it last night!! I only had creamed corn on hand though, it was too liquid-y, so I will def try frozen corn next time!

  15. I felt that it was a little liquid-y as well, but I liked a little bit of the "sauce" to go with it. Frozen corn may be less liquid-y for you.

  16. Oh my gosh Mary this looks delicious! My hubby Drew loves anything spicy so I'm definitely going to try it! Thanks for sharing sweet girl!

  17. This is literally my husbands love language - corn and jalapeno, ha! He would eat the whole bowl in one sitting, definitely giving this a try!

It makes me so happy each time you leave a comment. I love connecting with my readers! Happy blogging friends.
