Carrot Cake Cupcakes



My best taste tester (read; Thomas) came to town I knew I wanted to bake him up something and put his taste buds to the test.  And since my sweet tooth has been a little outta control lately, I decided on my favorite of all favorites.  Carrot Cake.
Carrot Cake is my absolute favorite dessert.  Seriously.  My Bubby makes the most wonderful carrot cake ever (she's also responsible for the Gorilla Bread recipe that has gone viral on Pinterest); I think it's the cream cheese frosting that gets me everytime.  
Carrot Cake is the dessert I just can't resist, and it's so good I don't wanna resist it and miss out on all the yummy-goodness.  And the only thing that could make my Bubby's recipe better was to transform them into bite size cupcakes.  Everything is always better mini.  Plus then I don't feel as bad popping ten of those suckers in my mouth in no time at all.  And so I did just that...



This recipe is the perfect amount of carrots.  Not to many, and if you grate them finely they aren't stringy and their texture doesn't come across through the cake.  Nothing sounds worse than stringy carrots to ruin the most amazing dessert out there.



Carrot Cake Cupcakes Recipe      

Cake Ingredients:
2 1/4 C Flour
2 1/2 tsp. Cinnamon
1 1/2 tsp. Baking Soda
1 tsp. Salt
4 Eggs
2 C Sugar
1 1/2 C grated carrots (about 3 large)
1 1/2 C Oil

Instructions:
+Preheat oven to 350 degrees.
+Mix dry ingredients (flour, baking soda, cinnamon, salt) in a bowl, and set aside.
+Beat eggs with sugar until lemon color and fluffy.
+Add carrots and oil and stir to mix well.
+Line cup cake tin, and pour 2/3 full.
+Bake for approx. 25 minutes, checking them to see when they're fully cooked.
+ Let cool.

*MY TIP : check with tooth pick in several cupcakes, when the tooth pick comes out without any batter on it the cupcakes are done.





Cream Cheese Frosting Recipe

Frosting Ingredients:
1 C (2 sticks) butter, softened
8 oz. Cream Cheese, softened
2 1/2 C Confectioners Sugar
2 tsp. Vanilla

Instructions: 
+ Mix all ingredients well, until well blended.

*BUBBY'S TIP: Set out eggs, butter and cream cheese the night before.  It is very important that all three ingredients are room temperature for this recipe.





And no cupcake is complete without a glass a milk.  Dessert is served.  Enjoy dear gals.

  8. I love carrot cake too! I used to think of it as an old lady dessert when I was little since it was always served at grandma bday parties, but now I can't get enough of it! I'll have to try out your recipe--your pictures look amazing!

  11. I was raised eating scrumptious desserts made by my Mother and aunts. We always had home made desserts. My hubs complains when I ask what we should have for dessert. Tuff, doggone it I want dessert. I'll never be a slim young thing again so I eat what I love. I'm not too fluffy but I'm not real thin either. But I love me dessert. And carrot cake, oh my we'll be eating this soon. Had to print out recipes, can't wait. Happy days
