Infinity Scarf Love [giveaway]

I am such a lover of infinity scarves, and it turns out you guys are too.  And obviously I don't blame you.  In fall scarves are my best friend; the perfect way to dress up any outfit.  And now that it's starting (slowly but surely) to get warmer I'm refusing to separate with my dear friend.

Welcome to a new week of Delicious Dish Tuesday, where we share our recipes and ask you to share YOUR awesome recipes with us!  Last week we had some delicious looking recipes shared, I love finding all these new recipes to add to my "to-do" list.  This past week my favorite recipe was shared by Laura @ Mom Mart.

Carrot Cake Cupcakes

My best taste tester (read; Thomas) came to town I knew I wanted to bake him up something and put his taste buds to the test.  And since my sweet tooth has been a little outta control lately, I decided on my favorite of all favorites.  Carrot Cake.
Carrot Cake is my absolute favorite dessert.  Seriously.  My Bubby makes the most wonderful carrot cake ever (she's also responsible for the Gorilla Bread recipe that has gone viral on Pinterest); I think it's the cream cheese frosting that gets me everytime.  
Carrot Cake is the dessert I just can't resist, and it's so good I don't wanna resist it and miss out on all the yummy-goodness.  And the only thing that could make my Bubby's recipe better was to transform them into bite size cupcakes.  Everything is always better mini.  Plus then I don't feel as bad popping ten of those suckers in my mouth in no time at all.  And so I did just that...

This recipe is the perfect amount of carrots.  Not to many, and if you grate them finely they aren't stringy and their texture doesn't come across through the cake.  Nothing sounds worse than stringy carrots to ruin the most amazing dessert out there.

Carrot Cake Cupcakes Recipe      

Cake Ingredients:
2 1/4 C Flour
2 1/2 tsp. Cinnamon
1 1/2 tsp. Baking Soda
1 tsp. Salt
4 Eggs
2 C Sugar
1 1/2 C grated carrots (about 3 large)
1 1/2 C Oil

+Preheat oven to 350 degrees.
+Mix dry ingredients (flour, baking soda, cinnamon, salt) in a bowl, and set aside.
+Beat eggs with sugar until lemon color and fluffy.
+Add carrots and oil and stir to mix well.
+Line cup cake tin, and pour 2/3 full.
+Bake for approx. 25 minutes, checking them to see when they're fully cooked.
+ Let cool.

*MY TIP : check with tooth pick in several cupcakes, when the tooth pick comes out without any batter on it the cupcakes are done.

Cream Cheese Frosting Recipe

Frosting Ingredients:
1 C (2 sticks) butter, softened
8 oz. Cream Cheese, softened
2 1/2 C Confectioners Sugar
2 tsp. Vanilla

+ Mix all ingredients well, until well blended.

*BUBBY'S TIP: Set out eggs, butter and cream cheese the night before.  It is very important that all three ingredients are room temperature for this recipe.

And no cupcake is complete without a glass a milk.  Dessert is served.  Enjoy dear gals.

Is it all coming back to you now?  I LOVED this pen, I mean the option to choose from FOUR colors all in one pen was unheard of to my 10 year old self.  And now that it's back out there my childhood-self couldn't be happier (and really I'd be kidding you to try and say I've grown up much since then).  I can distinctly remember trying to use more than one color at a time.  Determined that it was possible, and I was going to accomplish it.  And this video makes me giggle everytime I watch it, knowing how much I tried to force two colors at the same time.

But now that I am an "adult" I've found new ways to use my favorite childhood pen.  The  BIC® 4-Color™ has proven to be very resourceful now that I'm a little bit older.  Recently I've been trying to become more organized (if my college roommate ever reads this she'd be in total shock) but it's true.  And what better place to start than with blogging?  None I say.  
I love using each color for different topics when organizing my posts for the month.  The BIC® 4-Color™ colors all have different "personalities" and that really helps me color code my blogger topics, stats, etc and stay organized over all. 
Green is considered the "foodie" so of course I use it for all my recipes, ideas and social media notes related to food.  And if you know me at all, you'd agree that green definitely fits me best;  I'm addicted to social media and am a wanna-be foodie (baking and eating are right up my alley)!

I use Red to make general notes, fill out my post check lists, and any corrections I need to make in my blog planner.  Red has always been used for making corrections, so I love that it's part of the 4 Inseparable Colors in 1 Pen.
Not only are each of the colors fun and expressive, but the BIC® 4-Color™ company has created personalities for each color.  I'm not exactly sure why but this makes my heart a little happier when I think about each color as a different little "man" with a personality.  For example...

April Must Haves

I just canNOT believe that April has come and gone (almost) and just like that 1/3 of the year has flown by.  It seems that the older I get the more time flies, anyone else feel this way?  Anyways this isn't the time to dwell in the past, and if I'm not too careful May will be gone before I know it, too.  So before I get too carried away I thought I'd share some of my "must haves" for this past month , Spring and warmer weather.  *crosses fingers that this time warmer weather will actually stick around*  This is one of my favorite posts to do each month so I hope y'all enjoy :)

Rain Boots -- Rain Rain Go Away!  And since mother nature hasn't listened to me that well this year [read: thanks for the 2+ feet of snow this year] I'm assuming I'm gonna need to rain boots to make it through the rest of this rainy season.

The Home T -- I know I've mentioned this little tee of mine more than once on this here blog, but it's just so darn comfy I canNOT get over it.  No matter what month it is this item needs to be on your "must have" list-- no better yet it's needs to be in your now!  Get to it ;)

Flowers -- April showers bring May flowers..right?  Well I sure hope so.  April definitely brought it's fair share of rain, and as the month ends I hope to see lots of pretty flowers blooming everywhere I go.

This Bracelet -- I cannot get over how cute and dainty this heart and infinity bracelet is.  Plus I've bought a bracelet from Vintage Stamp Jewels before and LOVED it [check out that bracelet in this post].

Mongrams -- They are definitely a "must have" each and every month.  But I recently discovered this cute Etsy shop where they sell these wooden monograms, and you can paint/decorate them however you want.  I'll take five please!

Norts [nike+shorts] -- As the weather warms up I plan on lots of outdoor festivities.  I'm talking fishing, lake trips, hiking, dare I say that I plan to take a jog or two (probably not, but there's a possibility)--and while fighting off the bugs that love my sweet blood during these festivities I want to be comfy.  But I'm also not willing to risk looking cute while doing so.  Insert these bad boys (norts of course) that have become so popular in the past year and are SUPER comfy.  I have more than ten and plan on adding to my collection this spring :)  Do you own these cute & sporty shorts?

Tennis Shoes -- I've been wanting another pair of tennis shoes since January.  And of course they'd be good to sport with my norts while doing said outdoorsy stuff.  I'm also loving these and these.

Spring Scarves -- Living in the mountains I have tons of heavy duty scarves to keep me warm in the winter, but I've found myself struggling with finding a scarf great for Spring weather.  Until recently that is.  I introduce you to the infinity scarf in this outfit --more on this scarf next Wednesday [stay tuned; you'll be happy you stopped back by hint hint]

Celebrate Good Times Come On

With Easter just passing there's a lot to celebrate around here lately.  I mean seriously every day is a day to celebrate that our God is ALIVE and not dead.  So today I bring to you some celebration worthy moments and things that bring a smile to my face... (a positive version of my confessions)

+ Being able to put together an outfit that looks fashionable and fit for the season we're in.  This is a task.  And if I do say so myself I think I did pretty darn good--see above.

+ Chevron.  It's one of those patterns that I can't get enough of.  Add it to a light and breathable tunic and I'm sold.

+ Spending the last couple of days when my cousin, his wife, and their kids.  My nephews are the cutest.  Seriously, even if I am biased.  [there precious faces will be visiting the blog soon] 

+ Finding Jack Roger knock offs for a much smaller price.  I'm a recent college graduate who just started by first (and temporary) big girl job with school loans to pay off.  There's no room in my budget to be spending $100+ on a pair of sandals, no matter how cute.  When I found these sandals at the Shoe Dept. the other day for a much smaller price my heart skipped a beat and it was love at first site.  

+ Thomas is coming to visit finally.  I know more couples go longer without seeing each other, but it's still hard.   

+  This scarf (above).  Are y'all not in LOVE with that scarf?  It's so light, airy and perfect for spring.  Come back next week for a chance to win a scarf for yourself.  *throws confetti* (outside of course, no time for cleaning that mess up) Which reminds me tomorrow is the last day to enter the giveaway myself and some fab bloggers have put together.  Enter here.
