Craving Mexican?

Craving Mexican?  Don't feel like going out to eat.  I've gotchu babe. ;)  Today I have brought  you a beyond delicious Mexican recipe--Taco Bake.  And you know me only making the recipes that don't require much brain power.  And it's a good day when I can muster up any thinking at all after being at school with the kiddos all day--man, those little humans can wear you out!

Ingredients:

  • 1 lb Ground Beef
  • 1 packet of Taco Seasoning
  • 3 Large Flour Tortillas (8 in.)
  • 1/2 Salsa con Queso
  • 1.5-2 cups of shredded Mexican cheese blend
Instructions:
*Preheat oven to 350 degrees.
Brown meat in a medium pan.  Drain excess grease.  Add water according to the back of the taco seasoning packet.  Once the meat is done; turn off heat.  Add in 1/2 cup of salsa con queso.  Stir until combined.  In an 8in round pan (or cookie sheet if you don't have a round pan) you will begin to layer the taco bake.  First lay down a tortilla (you may want to use non-stick spray, but I have not found this to be a problem).  Then put about 1/3 of the ground beef on top of the tortilla.  Add 1/3 of the cheese on top of the meat.  Continue layering until you are done with all the layers: tortilla, meat, cheese; repeat.  Bake at 350 degrees for about 15 minutes.  Or until the cheese is melted and the edges have turned a golden brown.  Cool, slice and enjoy!
*I prefer to eat mine with sour cream--how can you go wrong with sour cream!

When I think of Mexican food and fiestas it reminds me of the wonderful dancers from Mexico I met this past in England at the Billingham International Folklore Festival.
